If I asked someone what sugar is, most people would say “it makes things sweet!”. That’s 100% true, but sugar is not just a sweetener. Sugar is one of the most powerful ingredients we have in pastry making.

Sugar has more than one role and more than one strength. To be honest, most desserts could not function without the addition of sugar (regardless of what those “sugar-free” folks say).
